Being vegan is such a blast.  It’s as if I have been reborn, learning a new way of living and meeting so many incredible people.  I truly believe age is all relative, and it’s all in your mind.  New experiences are what keep us young, wild, and free. Here are some of the great vegan treats and eats I have enjoyed this spring!

Random trip to Corpus Christi to get vegan chocolate at 10 PM.

Tofurky pizza is the most amazing thing ever.  They are quite pricey ($4.99), so I need to make these at home more often.

I love using sprouts in my cooking.  They add an unexpected crunch to a normally soft texture.

LOL!

  This is like eating a brownie and drinking milk with it.  Warm the LARABAR in the microwave if you like warm brownies :)

I ran 4.36 miles today, was a victim of a hit & run accident, landed THREE job interviews (WHAT?), and I start my new job on Monday.

It’s like life hit me with its best shot today! WOW.

I’m still going to interview at any & every place to make sure I find the right fit for me. I’ve been talking to God and letting God know that I’m finally fully ready for all He has in store for me.  I don’t really feel like I’m back to myself, per se.  Only because I’m even better than I ever was.  If you are going through a dark place in your life, I pray for you and I want you to know that it doesn’t last forever.

Things will get better and

you will make sense of all the CRAZY that life throws your way.

My allergies are brutal.  

I’ve never had them until college, because my university was in a city that is an allergen gold mine!  My nose is constantly dripping, there is sinus pressure, and my throat was sore.  Blah.  I had to get some sort of exercise, so I took my dog on an hour long walk today.

Hello, awkward light dissecting my midsection.

It was supposed to be 40 minutes.

But you know dogs!  They like to pee on light poles and talk to donkeys.

It was a beautiful walk, and I touched on a lot of personal issues.

I thought about all of the relationships (friendships, boyfriends) I have had in my life.  I have strengths, but I also have weaknesses.  We all do!  It’s O.K.  God creates us this way, so that we can be complete only in Him.  I believe in soul mates, and I believe in compatibility.  When your personality is compatible with another person’s, you are probably great friends and/or spouses.

There are a lot of sides of me, and there are certain people who bring out the positive and curious side of me. There are others who bring out my not-so-charming qualities like competitiveness and reserve.  And I realized I have never had a boyfriend who brought out more of my positive than negative character traits.  I would love to find that man someday who is just as positive and curious about the world, running, health, etc. like I am!

And that’s where the walk ended.

Today, I had the coolest job of being a chaperone at Audra, my little sister’s, field trip.

We came to this beautiful scenario out of the 1800′s with camels, Indians, pilgrims, and farmers.

If you know me, you’d know this is my kinda party.

Outfit of The Day :)

The Indian just about made my day.  He carved his own arrows, built his own furniture, and made his own jewelry.  He was LEGIT.

Audra made a point to point at me & yell at the farmer: “My sister doesn’t eat cow because she’s a vegan!”  DAMN RIGHT.

Yes, he's really teaching us how to milk a cow. And breaking my vegan heart at the same time.

Days like today, you don’t get very often. 

Have you ever been on a school field trip?  It makes me realize how UN-READY I am for children at this point in my life!  Phew!

I recently spent some time with my BFF Amber in San Antonio.  She has the most adorable two dogs!  We took them to this doggy park nearby.  I had never been to anything like this, and I loved it!  Check out the wolf dog running through his owner’s legs!  Ha!


We hit up our favorite vegan restaurant in San Antonio – Green Cuisine.

Their sweet potato fries will make you go effin crazy!  They won’t tell their secret ingredient either.
